How We Change as We Age
We change internally first. Little subtle changes happen in the cells of
organs like, the liver, kidneys and digestive tract. Mostly we are unaware of this mishap at the cellular level until
something external, like changes in skin texture or digestion happens to get
our attention. We are mostly made up of billions and billions of cells equipped
to do some pretty amazing things for us.
For instance we can produce progeny and keep all our internal organs and
systems working together with little thought.
But we must have food, energy and water. The molecules from food that our bodies can use very effectively
are carbohydrates, proteins and fats.
To do this we go through a process called metabolism. This is a process of breaking down what we
take in as food and building what we need to be in tip-top shape. As we age, our metabolism slows down which
means we are not using all the food we eat but instead storing it as fat and or
toxic by-products. The human thing to
do is to adjust the diet with which we are familiar, to one that would be more
beneficial. We have come to associate
this process with change, which is hard to do, and deprivation, which is,
discomforting, steals our joy and depresses our spirit. When we don’t choose wisely
we feel guilty, get stressed out about betraying ourselves and turn to food for
renewed comfort. Meanwhile our bodies are responding to all this in many
different ways, one of which is premature aging. Speaking from my experiences in my field of study, cell biology,
I have witnessed under a microscope how easy it is for human cells to become
stressed out and age while growing in a food media that was old or not quite
balanced. With this personal connection at the cellular level I sometimes find
myself thinking about what would make my cells happy, as well as what I want to

When we are young our bodies are in prime shape,
being supported by cells, which can renew and repair tissue in organs with

youth. As we age production of enzymes,
which speed things up, and the rate of food absorption starts to slow
down. Foods that kept us in great
shape, happy and contented is now turning to fat and giving us stress. We gain weight and have new lifestyle
symptoms like high cholesterol, high blood pressure or low blood sugar. This is the beginning of aging. Your doctor tells you that you have to stop
eating this and that kind of food. This
is your first hint of the connection between food content and aging. Because food is such joy, this can be very
upsetting. In this book we show the

eat as we age will keep us balanced and in good internal shape. This gives the appearance of being ageless.
A tendency today is to take an over load of vitamins
or medications to target every symptom of aging that comes up. Sometimes this works, but vitamins and
minerals are not a prime source of energy and can only be used properly in your
body along with food. That is why they
are called supplements. In fact with an
improper diet an overload of supplements can act as a toxin and cause even more
cellular stress. The wonder of food is
that it comes with so many of its own vitamins and minerals, which work so well
together, it would be a shame to overlook this synergistic factor. For
